Scope

The Pastry Demi Chef de Partie is responsible for food preparation and the day-to-day operation of the Pastry station.

Duties And Responsibilities
Prepare breads, pastries, and desserts to 5 Diamond standards following special dietary instructions where required
Follow recipes and presentation specifications
Help in menu creation
Operate standard kitchen equipment safely and efficiently
Ensure that station opening and closing procedures are carried out to standard
Clean and maintain station and overall kitchen through practicing good safety and sanitation
Assist with ordering
Work within budgeted guidelines
Adhere to all sanitation and food production procedures and codes
Assist with the enforcement of Health & Safety protocols

Physical Demands
Continuous standing for long periods of time
Frequent walking, bending
Frequent reaching above and below shoulder height
Frequent lifting and carrying up to 22 pounds / 10 kg
Occasional lifting and carrying up to 50 pounds / 23 kg
Working in a hot, noisy, fast-paced environment

Qualifications
Completion of Grade 12 or equivalent
Culinary degree in baking and/or pastry and 2 years of pastry experience OR 5 years of pastry experience
Previous experience in a leadership role in the kitchen
Able to meet the physical demands of the position
High standards for quality and presentation
Self-motivated
Able to work under pressure
Excellent communication and interpersonal skills
