About The Den ‘s-hertogenbosch

The Den, ‘s-Hertogenbosch, a Tribute Portfolio Hotel, opened its doors in March 2022, as part of the Odyssey Hotel Group and franchise of Marriott International. With its location between city and nature, The Den is easily accessible and within walking distance of the city centre and the central station of ‘s-Hertogenbosch. The city’s Burgundian lifestyle is embraced in the hotel’s living room, which turns into the restaurant and bar downstairs. Restaurant & Bar The Den offers casual all-day dining, where you can enjoy the best classics, a good cup of coffee & a nice glass of wine, all day long. Current, the only Rooftop Restaurant & Bar in ‘s-Hertogenbosch, is where you will get the ultimate culinary experience. Discover this new, cosmopolitan destination with amazing views over the historic city and its green surroundings. At Current, you will enjoy the finest wines, best cocktails and the tastiest dishes. With the use of seasonal products and with worldly influences, we bring the best flavours to your table. THE POSITIONThe F&B Manager is a key operational and strategic role for The Den ‘s-Hertogenbosch, where you will be responsible for managing the operational teams of the rooftop fine-dining restaurant & bar Current and hotel restaurant and bar The Den. You will work closely with the other leaders and back-of-house departments and be responsible for all operational matters within the F&B outlets of the hotel. You will report directly to the General Manager. Your direct reports are the Restaurant Managers and Chefs from both The Den and Current (4 FTE).

Your Key Responsibilities
Managing the day-to-day operations of the F&B outlets;
Attendance based on occupancy and wants and needs of the team, including weekends and evenings;
Being able to explain monthly figures to the General Manager;
Inspire, motivate and train the teams to do their best at all times and put the guests first;
Preparing budgets and charting the costs and revenues of the outlets;
Ultimately responsible for all operational matters within the F&B outlets for the Marriott Brand Standard Audit and Experiential Audit;
Setting targets for the departments and proactively managing them;
Creating the annual budget and monthly forecast and preparing P&L reviews;
Aiming to achieve KPI’s and Performance Zones from Marriott international and the Odyssey Hotel Group;
Review and improve procedures and aim for a positive output of scores (Staff Service, Food Quality);
Ensure and drive the team to create WOW moments for guests;
Monitoring proper execution of hygiene protocols, including HACCP and Global Food Safety within Marriott International;
Thinking along with the Chefs and Restaurant Managers on the development of the menu, beverage menu, cocktail menu, events and outlets in general;
Concept development and evaluation of F&B sales results (what goes well, what can be improved);
Oversee execution of product knowledge trainings given by the Restaurant Managers, including coffee, wine, beer and menu training, possibly in collaboration with suppliers;
Driver on the activation of social events and collaborations with local partners.

Job Requirements

WHAT YOU’LL BRING

You are pro-active, love working in hospitality and have a passion for hotels. You describe yourself as a real team player and inspiring leader.

You also recognise yourself in the following:
Minimum 5 years of work experience in a similar position;
Experience within the hotel industry;
Representative;
Coaching skills;
Guest oriented;
Energizing;
Excellent Dutch and English speaking and writing skills.
