About the Role

·         Using your creative flair and passion for food to ensure high quality food production for all hotel food outlets.

·         Manage and train the kitchen team including Stewarding Team Members to deliver an excellent guest experience.

·         Menu Engineering and creation

·         Managing department budget and cost controls, ordering supplies and ensuring WHS and HACCP requirements are consistently met.

·         Reporting to the Director of Operations, you will enjoy working in a fast-paced environment as part of a large and multicultural hotel team.

 

What will I be doing?

·         Ensuring your Team Members have completed all necessary training requirements.

·         Managing the hotel food cost to ensure is in line with hotel targets

·         Ensure that any overtime or irregularities are properly recorded and managed.

·         Conduct daily kitchen briefings with immediate team.

·         Attend and contribute to meetings and briefings as per schedule.

·         Ensure that kitchen internal information is adequate and updated.

·         Ensure that all event orders are checked daily and issued as needed.

·         Day to day running of the Kitchen according to business levels, adhering to Quality Assurance Audit (QA) requirements and HACCP guidelines, ensuring minimisation of spoilage and waste.

·         Check Kronos/time sheets, ensuring they are correctly completed, and hours are recorded accurately acting to resolve ongoing issues where necessary.

·         Working closely with the F&B Front of House team to ensure a seamless guest experience

What are we looking for?

A Head Chef serving Hilton Brands is always working on behalf of our Guests and working with other Team Members. To successfully fill this role, you should maintain the attitude, behaviours, skills, and values that follow:

High school or equivalent, preferably from a professional culinary school.
5 to 7 years of experience in kitchen management, western restaurant in a 4 / 5-star hotel or high-level individual restaurant and 5 years of experience as a Chef.
Good command of English to meet business needs.
Possess creative and earnest research and development spirit.
Able to provide training, lead the team, motivate the team with the right attitude and pursue excellence.
Extensive knowledge of kitchen equipment and ability to train staff.
Basic knowledge of computer operation.
Knowledge of food safety systems.
Able to complete tasks on time in order of priority.
Work well under pressure, able to stay calm and solve problems.
Able to consume all products and ingredients reasonably.
Able to accurately design and follow recipes.
Able to attend additional kitchen classes or seminars.
